MILK CAKE/KALAKAND RECIPE

So I hope you have visited my previous two posts out of which one is a starter and another one is a meal. So now it's time for the recipe of a sweet dish which is very popular among the people. 
The main reason behind posting this recipe is because I love this sweet a lot.
So for anyone who doesn't know what a milk cake is and how it looks like. I will let you know about this amazing dish an how can it be prepared easily.

Milk Cake is also known as Kalakand (but slightly differs in texture and color) and has its origin from Rajasthan (India).It is mostly prepared during the time of festivals like Holi, Diwali, etc. 
It is a sweet fudge prepared from solidified milk and can be prepared in a jiffy which is perfect for your guests. Every bite of this milk cake will take your taste buds to heaven. 




Let's begin with the preparation of Milk Cake which is just a three step recipe. First of let us know about the ingredients required to make this recipe.

INGREDIENTS:-

                                1 Litre Milk
                                3 Tsp Lemon Juice
                                1 Tbsp Ghee
                                1/2 Cup Sugar 

HOW TO MAKE MILK CAKE :-

1.) Simmer The Milk upto 1/3 of it's Quantity

Take a deep sauce pan and pour the 1 Litre milk into the pan. Heat the milk on a high flame so that it gets a boil quickly. After the boil, reduce the flame to medium and simmer it to 1/3 of its original quantity. 
Keep stirring in between because it will then prevent the milk from sticking to the bottom.

2.) Let The Milk Turn Grainy





You must have seen that the milk cake is grainy in texture. To get the grainy texture to your milk cake, add lemon juice to the milk.
Gradually you will notice that the milk will curdle separating the water. Now, stir the milk well and cook the till it is light brown in color and grainy in texture.
Now add sugar in the pan and stir well for some time. Cook the mixture until it has a thick consistency.
Slowly, the mixture will start giving out the nice smell and start getting converted from light brown to dark brown in color.
Now turn of the flame and let it cool down a little.

3.) Setting of Milk Cake

Now allow the milk cake to settle for some time. Take a plate and brush it with ghee (clarified butter).
This is done so that the milk cake do not stick to the bottom of the plate.
Spread the mixture evenly in the plate and let it sit for 3-4 hours. After the milk cake is set, use a hot knife to take them out and let it remain at room temperature for 15 minutes. 
Cut the milk cake into the desired shape and sizes. I have eaten it in the 'D' shape so I will cut it in the same shape and also a medium size which is comparatively bigger than what we get in the market.

(I would like to tell you that I have observed that when you keep this in the refrigerator, the taste starts diminishing after 2-3 days. So keep it outside if the climate outside is cold otherwise you don't have any other choice of keeping it in refrigerator.)
